GF Rhubarb bars
Crust
2 cups organic oats
1 cup GF flour
1/2 cup melted butter
1/2 tsp baking soda
Pinch of salt
Topping
2 cups rhubarb
1/2 tsp cinnamon
1 egg
1/2 cup brown sugar
1 tbsp lemon juice
1 tsp vanilla extract
Mix until combined
Flatten 1/2 oat mixture in greased or lined 9x13 baking dish
Top with rhubarb mixture. Take other half of oats and use as topping
Bake at 350 for 20-30 minutes
