Tex mex egg rolls πβπ©
Ingredients
1.5 cups corn
1.5 cups canelli beans
1.5 cups kidney beans
Taco seasoning (if store bought, 1/2 packet)
3 garlic cloves
*can add 1/2 tsp. Cayenne if spice is preferred
1 avocado
1/2 red onion
Cilantro lime sauce
1 full bunch of cilantro
1/2 cups corn yogurt
1 jalapeΓ±o(seeded and veined)
1 garlic cloves
Juice of 1-2 limes
Salt to taste
*Bake at 350 until golden brown. Reheats best in oven. Makes about 15 egg rolls
*Can be topped with fresh salsa as pictured
