Tex mex egg rolls πŸ‹β€πŸŸ©

Ingredients

  • 1.5 cups corn

  • 1.5 cups canelli beans

  • 1.5 cups kidney beans

  • Taco seasoning (if store bought, 1/2 packet)

  • 3 garlic cloves

  • *can add 1/2 tsp. Cayenne if spice is preferred

  • 1 avocado

  • 1/2 red onion

Cilantro lime sauce

  • 1 full bunch of cilantro

  • 1/2 cups corn yogurt

  • 1 jalapeΓ±o(seeded and veined)

  • 1 garlic cloves

  • Juice of 1-2 limes

  • Salt to taste

*Bake at 350 until golden brown. Reheats best in oven. Makes about 15 egg rolls

*Can be topped with fresh salsa as pictured
